My story begins in the bubbling Yabba pots of my family’s food truck in St. Croix to the bustling streets of Accra. Imagine a high school student prepping meals rivers of onion on the back of a truck never knowing I was preparing for a lifelong adventure. That was me mastering the basics while dreaming of a culinary quest that would take me around the world. The journey, born on a food truck called The Ital Train, gifted a solid foundation of vital, plant-based, vegan cuisine. From the truck to the feet of traditional Crucian Cooks and Authentic African Chefs, I happily soaked in the healing secrets passed downed through generations eventually discovering my very own superpower: the ability to fuse diverse flavors into harmonious healing symphonies.
Along this culinary odyssey I've shifted from prep person, line cook, private caterer to mobile plant-based pop up owner and today I embark upon my greatest challenge ever legit business owner where I get to create clean edible experiences that aim to fuel and nourish.
